Chocolate Chip Cookies

Ingredients

  • ½ cup (112g) unsalted butter, melted
  • ¾ cup + 2 TBSP (200g) packed brown sugar
  • ½ cup (112g) white sugar
  • 1 whole egg and 1 egg yolk
  • 2 tsp (6g) vanilla extract
  • 1 ½ cups (200g) all purpose flour
  • ½ tsp (4g) baking soda
  • ½ tsp (3g) salt
  • 7 oz dark chocolate (70%)

Notes

  • Use the best chocolate you can find. A high quality dark chocolate bar will make a world of difference.

Directions

  1. melt butter
  2. mix brown and white sugar together, then add melted butter and continue mixing
  3. add eggs and vanilla extract, mix well
  4. in separate bowl whisk together flour, baking soda and salt
  5. add flour mixture to wet ingredients and mix until just combined
  6. break dark chocolate into large pieces and rough chop it
  7. fold in chopped chocolate until evenly dispersed
  8. cover dough and place in refrigerator for at least 30-45 min
  9. preheat oven to 350ºF (180ºC)
  10. use ice cream scoop to put cookies on parchment lined baking sheet
  11. bake for 10.5 min (after 5 to 6 min, take the baking sheets out of the oven and “drop” them on the counter. This flattens the cookies. Place them back in the oven switching racks. Take them out and drop them again every 2-3 min after that until fully baked)
