Blueberry Coffee Cake

Ingredients

Streusel Topping

  • ¾ cups (165g) light brown sugar
  • 1 cup (120g) flour
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 6 tbs (85g) unsalted butter

Coffee Cake

  • 2 ½ cups (300g) flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 10 tbs (140g) unsalted butter
  • 1 ¼ cups (250g) sugar
  • 1 tbs (2 lemons) lemon zest
  • 2 large eggs
  • 1 tsp vanilla extract
  • cups (160ml) whole milk
  • 2 cups (300g) fresh blueberries

Notes

  • If your blueberries are too big they will sink to the bottom of the pan while baking (it will still taste good though). If you don't want them to sink make sure they are smaller than an M&M, or just cut into halves/quarters.
  • Don't like blueberries? Try a different fruit!

Directions

Streusel Topping

  1. In a medium mixing bowl, whisk together the brown sugar, flour, cinnamon, and salt.
  2. Add the butter (room temperature).
  3. Using a fork or your hands, incorporate the butter into the dry mixture until a crumbly texture forms. (The mixture should clump together when squeezed, but crumble easily).
  4. Chill until ready to use.

Coffee Cake

  1. Preheat the oven to 350°F (180ºC). Line parchment paper in 1, 9-inch square baking pan.
  2. In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl combine the butter, sugar, and lemon zest. Beat on high speed until light and fluffy, about 4 minutes. Add the eggs, one at a time, beating until each is fully incorporated. Stop occasionally and scrape down the bowl. Beat in the vanilla.
  4. With the mixer on low speed, add a third of the flour mixture to the butter mixture. Pour in half of the milk, beating until just incorporated. Repeat, alternating with the remaining milk and flour mixture. Fold in blueberries. (The batter will be thick.)
  5. Spread the batter into the prepared baking pan. Sprinkle with streusel topping.
  6. Bake for 32 minutes or until a wooden pick inserted into the center of the cake comes out clean. Let cool for at least 15 minutes before slicing and serving.
