Banana Oatmeal Muffins

Ingredients

  • 1 ½ cups (180g) flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 ½ cup (150g) oats
  • cup (133g) sugar
  • cup (120ml) milk
  • cup (60ml) vegetable oil
  • 1 tsp vanila extract
  • 1 ½ cups (375g) bananas
  • ½ cup (90g) chocolate chips

Notes

  • you can bake unpeeled bananas at 350ºF (180ºC) until they are black and they will be perfectly "ripe" for baking recipes.

Directions

  1. Preheat oven to 375ºF (190ºC) and line 12 cup muffin pan with liners.
  2. In a large bowl whisk together flour, baking powder, baking soda, cinnamon and salt. Then add in oats and mix.
  3. In a separte bowl mix together sugar, milk, oil and vanilla extract. Stir in mashed bananas.
  4. Pour sugar mixture in with dry ingredients and mix until just combined. Stir in chocolate chips.
  5. Divide batter eveningly among paper liners. Bake for 18 to 22 minutes or until golden brown.
  6. Let muffins cool in pan for 5 minutes before removing to wire rack to cool further down.
