Ingredients
- 1 ½ cups (180g) flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- 1 ½ cup (150g) oats
- ⅔ cup (133g) sugar
- ⅔ cup (120ml) milk
- ⅓ cup (60ml) vegetable oil
- 1 tsp vanila extract
- 1 ½ cups (375g) bananas
- ½ cup (90g) chocolate chips
Notes
- you can bake unpeeled bananas at 350ºF (180ºC) until they are black and they will be perfectly "ripe" for baking recipes.
Directions
- Preheat oven to 375ºF (190ºC) and line 12 cup muffin pan with liners.
- In a large bowl whisk together flour, baking powder, baking soda, cinnamon and salt. Then add in oats and mix.
- In a separte bowl mix together sugar, milk, oil and vanilla extract. Stir in mashed bananas.
- Pour sugar mixture in with dry ingredients and mix until just combined. Stir in chocolate chips.
- Divide batter eveningly among paper liners. Bake for 18 to 22 minutes or until golden brown.
- Let muffins cool in pan for 5 minutes before removing to wire rack to cool further down.
