Banana Bread

Ingredients

  • 6 tbs aquafaba (the liquid from a can of chickpeas)
  • ¾ cup brown sugar
  • cup oil
  • ¼ cup + 2 tbs milk
  • 1 tbs lemon juice
  • 4 bananas (very ripe)
  • 1 tsp vanilla extract
  • 2 cups flour
  • ¼ tsp sea salt
  • 1 tsp baking soda
  • ½ tsp cinnamon

Notes

  • you can bake unpeeled bananas at 350ºF (180ºC) until they are black and they will be perfectly "ripe" for baking recipes.

Directions

  1. beat auqafaba for 1 minute until foamy
  2. mix packed brown sugar and oil, then add whipped aquafaba and blend
  3. stir milk and lemon juice together and let sit
  4. mash 3 room temperature very ripened bananas
  5. add milk and lemon juice mixture and vanilla extract to sugar mixture, then mix
  6. add mashed bananas and mix
  7. mix together separately flour, sea salt, baking soda and cinnamon then add to mixture and mix just enough, DONT over mix.
  8. pour into 1, 9”x5” greased pan, place 1 sliced ripened banana on top, then sprinkle sugar on bananas
  9. bake at 350ºF (180ºC) for 45-50 (47) min, start checking at 40 min
  10. Let cool in pan until pan is cool to the touch.
  11. let cool on wire rack for 20-30 min before cutting
