Ingredients
- 6 tbs aquafaba (the liquid from a can of chickpeas)
- ¾ cup brown sugar
- ⅓ cup oil
- ¼ cup + 2 tbs milk
- 1 tbs lemon juice
- 4 bananas (very ripe)
- 1 tsp vanilla extract
- 2 cups flour
- ¼ tsp sea salt
- 1 tsp baking soda
- ½ tsp cinnamon
Notes
- you can bake unpeeled bananas at 350ºF (180ºC) until they are black and they will be perfectly "ripe" for baking recipes.
Directions
- beat auqafaba for 1 minute until foamy
- mix packed brown sugar and oil, then add whipped aquafaba and blend
- stir milk and lemon juice together and let sit
- mash 3 room temperature very ripened bananas
- add milk and lemon juice mixture and vanilla extract to sugar mixture, then mix
- add mashed bananas and mix
- mix together separately flour, sea salt, baking soda and cinnamon then add to mixture and mix just enough, DONT over mix.
- pour into 1, 9”x5” greased pan, place 1 sliced ripened banana on top, then sprinkle sugar on bananas
- bake at 350ºF (180ºC) for 45-50 (47) min, start checking at 40 min
- Let cool in pan until pan is cool to the touch.
- let cool on wire rack for 20-30 min before cutting
