Apple Cake

Ingredients

  • (165g) brown sugar
  • (150g) white sugar (+ extra to sprinkle on top)
  • (270g) flour
  • 1 tsp cinnamon
  • ¾ tsp baking soda
  • tsp baking powder
  • tsp salt
  • tsp nutmeg
  • (225g) apples (shredded)
  • (225g) butter (melted)
  • 3 eggs

Notes

  • Sugars are considered wet ingredients.
  • This recipe can be prepared in a single big bowl, making it easier for cleaning

Directions

  1. Add brown sugar to bowl and break up clumps. Then add white sugar and mix.
  2. Add all remaining dry ingredients and whisk together.
  3. Grate apple on cheese grater and set aside in bowl. No need to peel.
  4. Melt butter and add to mixture along with beaten eggs. Mix until just combined.
  5. Add shredded apple and fold in.
  6. Pour into cake pan, lined with parchment paper, and top with sugar.
  7. Bake for 20 min at 350ºF (180ºC).
  8. Let cool on wire rack for 20 min before removing from cake pan.
